Poisoning on the doorstep: the most dangerous dishes of the New Year's table according to a nutritionist
New Year's holidays are traditionally associated with an abundance of treats and long feasts. However, it is this period that doctors call the most difficult for the body. Already in the first weeks of January, the number of referrals to gastroenterologists and therapists is sharply increasing — with food poisoning, exacerbations of gastritis, pancreatitis and the consequences of overeating. Which dishes of the New Year's table pose the greatest danger to health and how to spend the holiday without harm to the body — in the material of Izvestia.
The main "saboteurs" of the festive table
According to Elena Khokhlova, a nutritionist and MD, the danger lies not so much in specific products as in their combination, quantity, cooking method and storage conditions.
— Salads seasoned with mayonnaise remain the absolute leaders in the number of sad consequences. Mayonnaise combined with boiled vegetables, fatty fish or sausage creates a tremendous strain on the pancreas and liver," explains the expert.
The insidiousness of such dishes is that their calorie content alone often does not seem critical. But in practice, the New Year's table is rarely limited to one salad. As a rule, in an evening a person eats a "standard set": herring under a fur coat, olivier, meat and fish snacks, canapes, baked meat, mashed potatoes, vegetables, cake, fruits, and also drinks champagne and sugary drinks.
— As a result, the body receives from 2,700 to 3,000 kcal per meal, which completely exceeds the daily requirement of an adult. At the same time, the total amount of fat can range from 95 to 190 g or even more, depending on the portions and recipes. In fact, this is the equivalent of a good pack of butter eaten overnight," the doctor notes.
A separate danger is microbiological. Multicomponent salads with mayonnaise are an ideal breeding ground for bacteria.
— Their shelf life in the refrigerator after refueling is no more than 12 hours. A salad left on the table overnight becomes a direct route to severe food poisoning by morning, the nutritionist warns.
"Explosive mixtures": dangerous combinations of food and drinks
Often the problem lies not in one dish, but in its combination with other products. Doctors distinguish the so-called deadly triad: alcohol, fatty foods and mayonnaise.
"Such a blow to the digestive system can lead to the development of acute pancreatitis, which often requires urgent hospitalization," Khokhlova notes.
The specialist calls champagne a particularly insidious drink. Carbon dioxide stretches the walls of the stomach, increases acid production and provokes heartburn, heaviness and pain.
Other combinations are equally harmful:
— protein foods (meat, fish) with lots of citrus fruits — this often causes fermentation and heartburn;
— fatty meat with bean side dishes — leads to putrefactive processes in the intestines and general intoxication;
— mixing several types of alcohol per evening significantly increases the toxic effect on the body.
Who is at increased risk?
The nutritionist emphasizes that New Year's experiments with food are especially dangerous for some categories of people. First of all, these are people with chronic diseases of the gastrointestinal tract - gastritis, pancreatitis, cholecystitis. For them, a violation of the diet during the holidays often ends with a sharp exacerbation and seeking emergency help.
— Those who were on strict diets before the holidays are also at risk. A sudden and heavy food load after restrictions is a huge stress for the body, which often ends up in a hospital bed," the doctor notes.
Patients with hypertension and kidney diseases require special attention. Pickles, sausages, cheeses, and ready-made snacks contain excess salt, which can trigger a blood pressure spike and hypertensive crisis.
Children and the elderly are also vulnerable: their digestive and immune systems are less able to cope with toxins and overloads.
A holiday without consequences: the rules of a reasonable feast
According to the nutritionist, it is quite possible to celebrate the New Year without harm to health, if you follow a few simple rules. First of all, you should think about the menu in advance and abandon the idea of "the more, the better."
— Cook only your favorite dishes, not the whole possible set. Add entertainment to the program: walking, playing, dancing, so as not to spend the whole night at the table, the specialist advises.
The expert recommends upgrading the usual recipes. Mayonnaise in salads can be replaced with natural yogurt, low-fat sour cream or light sauces based on mustard and lemon juice. In olivier, instead of sausage, it is better to use boiled chicken breast or turkey, and replace some of the pickles with fresh ones. For hot dishes, it is preferable to choose baked or stewed turkey, rabbit or lean fish.
It is important to observe moderation and the "one plate" rule.
— Don't try everything. Put a little on a plate with a diameter of 20-24 cm — this is enough for satiation and pleasure," explains Khokhlova.
At the same time, the doctor warns against fasting during the day on December 31. A light breakfast and lunch will help to avoid overeating in the evening.
Alcohol also requires control. The nutritionist advises alternating each glass of alcohol with a glass of pure non-carbonated water and avoiding mixing different drinks.
—Ascending systems and other similar myths do not work and only increase intoxication," the expert emphasizes.
In addition, you should not turn the holiday into a "night watch".
— It is better to sit down at the table before 22-23 hours, when the digestive system is still active. After midnight, switch to communication and movement," the doctor recommends.
New Year is a celebration of joy, not a test for the body. A reasonable approach to the menu, attention to the combination of products and moderation allow you to spend the holidays cheerfully, without heaviness, pain and visits to the doctor. It is these habits that help you stay healthy and start the new year feeling good.
